I bake quite a few cakes - sometimes just for the home, sometimes to take along at St Augustine’s. With the recent strawberry crisis, I decided to experiment with chucking some of things into my usual boiled fruit cake recipe.
It worked, quite well, and a few people have asked me for the recipe. So here it is!
This recipe is optionally vegan and gluten free, and as the batter is mostly just a medium to hold the fruit in place, it will work very well as such.
